Why is seaweed good for you?
Seaweed or sea vegetables are unique in that all their nutrients come directly from the sun, the ocean and photosynthesis. A species with lots of variety, seaweed is best known for its nutritional properties and flavour. Available in a multitude of applications, sea vegetables are a rich supply of minerals (most notably calcium, iodine, copper and iron), fibre, protein and vitamins whilst being low in calories and fat. With an impressive nutritional profile it’s no wonder they’re fast becoming a staple on our plates.
The source of Umami
Known to chefs and foodies alike, Umami is the ‘fifth taste’, a rich, salty, savory flavour. Seaweeds have a high glutamate content, an amino acid said to create this unique tang.
